For master cheesemaker Christa Egli the old oak tree in front of her cheese dairy became a symbol for her cheese made of raw milk from Girenbad. Its incomparable flavour results from Paul Bieri's "magic potion", wich is rubbed onto the cheese as it matures in the clay cellar.
This Buurespeck ("farmer's bacon") is produced at Family Fuster's farm at the foot of the Schauenberg mountain. It is smoked carefully in a cold smoke house until it develops its unmistakeable smoky flavour.
The family-owned Schmid cheese dairy is situated in the midst of a hilly landscape in Kleinbäretswil - with a view of Vrenelis Gärtli and the Alpstein region. Jägerkäse ("hunter cheese") is made from raw milk and is rubbed with fir shoots and herbs, wich are carefully gathered in Bärenbachtobel.
